FUDIS Food Truck Festival at The St. Regis Bahia Beach
Last weekend, the luxurious St. Regis Bahía Beach Resort hosted its 5th annual FUDIS, Gourmet Food Truck Festival. This edition, nicknamed “Farm Fresh”, focused on sustainable farming and farm to food truck offerings. Festival goers also encountered a farmer’s market with local products from around the Island.
At Piscolabis, Chef Dennis Velez offered a mahi-mahi ceviche in a passion fruit marinade with coconut arepas. Yareli Manning of The MeatBall Company created an eggplant meatball, sourcing from Frutos del Guacabo, a family-run farm owned and operated by Efren Robles & Angelie Martínez. Since 2010, Frutos del Guacabo has been supplying local restaurants with hydroponic greens from their farm in Manatí, Puerto Rico.
Artisanal sausages had a strong presence at the festival, both as a vendor and at some of the food trucks. Pedro Alvarez is one of 4 brothers who runs their successful sausage factory, AlCor Foods. They produce pork and chicken longazina (Puerto Rican sausage) as well as Spanish chorizo and Italian sausage. Located in Bayamon, Puerto Rico the plant employs members of the community, many of the workers are childhood friends.
Other vendors like Antojitos de Mango, sell jellies and preserves from mangoes grown in Santa Isabel, Puerto Rico. Even though we’ve tried them before, we couldn’t resist sampling the olives from Olive Oliva which are marinated in local herbs like recao and ají dulce.
