RECIPES: Bacon & Guava Panetela | Boozy Rum & Coconut Limeade

Panetela de Guayaba is a traditional Puerto Rican dessert made with guava paste.  During our take over of the @DiscoverPuertoRico instagram account, we tweaked the classic recipe to make it even more brunch friendly. We added bacon, cinnamon, and rum for a fun, boozy twist!

A Puerto Rican brunch wouldn’t be complete without a cocktail! Inspired by one of our trips to Colombia’s Caribbean, we made a version of a “limonada de coco”, adding aged rum. These recipes are easy to replicate at home and will give you a taste of Puerto Rico.

Guava & Bacon Panetela

Ingredients:

1 stick of unsalted, melted butter (extra for greasing the pan)
1 cup sugar (white)
2 eggs
1 tsp. vanilla
2 tbsp. aged rum
2 tbsp. coconut oil
2 tsp. baking powder
1 tsp. kosher salt
2 cups all purpose flour
1.5 tsp. ground cinnamon (optional)
1 pound crispy bacon, chopped finely
18 ounces guava paste, chopped into small pieces
Powdered sugar for dusting

Directions:

Preheat the oven to 350ºF. Whisk (by hand) the melted butter with the sugar. Incorporate the eggs, vanilla, aged rum and coconut oil and whisk until creamy in texture. Add the baking powder and kosher salt and stir using a wooden spoon. Divide the mixture in two. (It will be sticky)!

Butter your mold and spread half the dough, evenly on the bottom of the mold, pressing down with your fingers. Meanwhile, heat a pot over medium-high heat with 2 tablespoons of water. Melt the guava, stirring until the guava reaches a jam consistency. remove from the heat and incorporate the chopped bacon and cinnamon. Spread the bacon guava jam in an even layer and top with the remaining dough.

Bake at 350ºF for 30 minutes. Wait for the panetela to cool, cut in squares, top with powdered sugar and enjoy!

Frozen Boozy Coconut-Limeade (Limonada de Coco con Ron)

Ingredients:

1/2 cup lime juice
1 cup cream of coconut
1/2 cup light rum
lime zest to taste
2.5 cups ice
a boy and a girl drinking from a glass

Directions:

Pour all the ingredients into a blender and blend until smooth. Serve in your favorite glass and garnish with mint, a dehydrated lime, or a lime twist.
